Comfort Food for a Cold Day




Just gather up a bunch of your root veggies: any or all of these, potatoes, carrot, onion, sweet potato, beets, parsnips and then others if you are so inclined like apples and cabbage, peppers. Wash them and trim the ends. If you have organic veggies, leave on the skins. Cut them into large about equal sized pieces. Then throw them into a large bowl and toss them all with your favorite oil(I use olive) and sprinkle with your favorite seasonings.

In the mean time, you should heat up your oven very hot, 450-500 degrees is good. Line large cookie sheets with parchment paper or oil and place the veggies in a single layer and not real crowded on the pan(you may need 2, or 3?) Place in oven and bake about 30 minutes or until done(test with fork) and remember to stir half way through.
