Here are our front steps this morning at 7:30. The snow so heavy pulling over bushes and trees laden like frosting.
Britta worked busily inside creating a wonderful table and our favorite oven pancakes, puffing up dramatically as they bake and then sprinkled with fresh lemon juice and powdered sugar.
Due to so many requests, I will now post the recipe for these amazing pancakes!
First, do you have glass bakeware with slanted sides? (a pie pan works well) This design ensures that your pancake will creep up the sides of your pan in the oven and look glorious!
Second, does your oven get super hot? (500 degress) If not, I can not guarantee the success of this recipe.
If you can say "yes" to the above questions, you can procede with relative certainty that your pancakes will look and taste just like ours!
The recipes origins from a favorite cookbook, Scandinavian Feasts by Beatrice Ojakangas.
Its called: Oven Pancake.
Wisk together: 8 eggs, 2 cups milk(but reserve 1 cup for a moment), 2 cups flour, 2 teaspoons sugar, 1 and 1/2 tsp salt until well blended. Add second cup of milk after all the lumps have smoothed out and blend together.
Let stand at room temperature for 30 minutes. In the meantime, preheat the oven to 500 degrees F and place a rack in the center but not too close to the top.
Next, once the oven is preheated, place enough butter to coat the pan in the pan, and place in oven until butter is melted but not brown. (The pan must be hot to cook the pancake properly!)
Remove from oven and coat the bottom of the pan with the butter before pouring in enough batter to cover the bottom.(Too much batter makes for a very thick result)
Bake until sides are brown and center is cooked (roughly 10-15 minutes)
Serve immediately, for dramatic effect. Sprinkle with fresh lemon juice(wedges) and powdered sugar. Berries and whipped cream are fabulous too!
I haven't found a soul yet who didn't love these!

We know how you spent your snow day! It was beautiful and crazy at the same time. But we had to spend a few hours shoveling 16 " of snow off of all the cars at the lot! I sit in the hot tub made up for it.
